Blueberry Friand Slice

For those times when you want to make friands, but don't have a friand tin.



You'll need:

4 egg whites
1 tbs milk
1 vanilla bean (seeds scraped)
90g butter, melted
1 cup almond meal
3/4 cup icing sugar, sifted
1/3 cup self-raising flour
100g blueberries

Pre-heat your oven to 170C

Grease a small rectangle slice tin and line the base with baking paper. Allow enough paper to come over the edges to create a handle, this makes the removal of the slice from the tin extremely easy.

Place you egg whites into a large bowl and whisk until combined and frothy. Add milk, vanilla bean seeds, almond meal, icing sugar and flour and stir until just combined.

Pour the mixture into the prepared pan and dot the blueberries over the top. Bake for 30 minutes or until lightly golden and springy. Allow the slice to cool in the tin before lifting it onto a chopping board. Cut into rectangles and devour with a latte or a steamy hot cuppa.
